[ Celinas Stuffed Mushrooms ]

Ingredients:

  • 12 portobello mushrooms (or any fillable mushrooms)
  • 1 cup cream cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup mushroom stems, chopped
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (for topping)

Cooking Directions:

  • Prepare mushrooms: Clean the mushrooms and remove the stems. Finely chop the stems.
  • Make filling: In a bowl, mix together cream cheese, sun-dried tomatoes, chopped mushroom stems, salt, and pepper.
  • Fill mushrooms: Spoon the mixture into the mushroom caps.
  • Add cheese: Top each mushroom with shredded cheese.
  • Bake: Place the stuffed mushrooms on a baking sheet and bake at 200°C (about 400°F) until the cheese is melted, approximately 15 minutes.
