[ Noodle salad with Beef & Spicy chili sauce ]

Ingredients:
- The Beef
- 400 g beef tenderloin
- 1 ss soyasaus
- Salt & pepper
- Oil
- Chili sauce
- 1 red chili, finely chopped
- 1-2 cloves of garlic, finely chopped
- 1 pinch salt
- 3 tsp brown sugar (to taste)
- 3 tbsp lime juice (to taste)
- 1-2 tbsp Asian fish sauce (to taste)
- 2 tbsp water
- The Salad
- 150 g rice noodles
- 1 courgette or any other salad, finely chopped
- 1 small red onion, in thin strips
- 1 mango, in strips
- 1 cucumber, in “crescents”
- 1-2 carrots, in strips
- 2 radishes, thinly sliced
- 10 cherry tomatoes, halved
- fresh coriander, roughly chopped
- fresh mint, roughly chopped
- 5 tbsp peanuts (unsalted)
- 1 lime, in boats
Cooking Directions:
- Cut the meat in half so that you have two thick, evenly sized steaks. Brush the meat with soy sauce and season with salt and pepper. Fry in a hot frying pan with neutral oil, 2-3 minutes on each side. Remove the meat from the frying pan and let it rest while you prepare the rest of the salad. Just before serving, cut the steaks into thin slices.
- Put chilli, garlic, salt and sugar in a mortar and pound it to a mash. Add the other ingredients and taste until you find a nice balance between the sweet, salty and sour. (Alternatively, you can make the chili sauce with a stick blender or similar.)
- Cook the rice noodles according to the instructions on the package, rinse them in cold water and let them drain.
- Cut up the ingredients for the salad as indicated and place them in a wide, shallow bowl. Then add the rice noodles, coriander, mint and half of the chilli sauce and gently toss the salad together. Spread the meat on top of the salad and then sprinkle the chopped peanuts over. Serve the rest of the chili sauce and lime wedges as a side dish
